Foodie Fridays – Protein GF Waffles

It’s funny how a thought hits me causing me to do a search on-line. This morning the thought was, “I wonder if there is a recipe for high protein waffles?” I wasn’t even searching GF, that happened as a surprise bonus.

I’m trying to eat my daily protein requirements which is 54 grams—that is a lot! This recipe boasts 45 grams of protein per two waffle serving. I don’t eat two waffles, but even still 22.5 grams of protein to start the day is a win!

I made a few changes, enough to call this my own recipe. I hope you’ll give it a try and let me know what you think!

Ingredients:

  • 1/2 cup quick cooking GF oats
  • 1/2 cup Greek yogurt plain
  • 2 eggs
  • 1/2 cup protein powder, vanilla
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 teaspoon coconut oil
  • Milk, if batter is too thick (optional)

Instructions:

Preheat waffle maker.

Place all ingredients, except milk, in a blender or food processor. Blend until smooth.

Spray waffle iron with spray oil. Pour batter onto hot plate and cook according to waffle maker directions.

Continue with all batter. Serve hot with buttered syrup and your choice of toppings.

These waffles are crunchy on the outside and soft on the inside. I was so impressed I had to share.
